Jamaican Coconut Shrimp

Ingredients

Instructions

  1. Shell and devein shrimp leaving tail intact.
  2. Rinse and pat dry.
  3. Combine flour, sugar salt, egg, ice water and vegetable oil, beat until smooth. Set aside.
  4. Mix together grated coconut and curry powder.
  5. Dip each shrimp into batter then into coconut mixture.
  6. Heat ½ cup vegetable oil in frying pan
  7. Fry coconut shrimp in heated oil until golden brown.
